Ingredients

  • 200g halloumi cheese
  • 3 cups mixed greens (arugula and spinach)
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, sliced
  • 2 tbsp extra virgin olive oil
  • 2 tbsp freshly squeezed lemon juice
  • Salt and pepper to taste

Instructions

  1. Gather all ingredients; wash mixed greens and slice cucumber.
  2. Heat olive oil in a non-stick skillet over medium heat until shimmering.
  3. Cut halloumi into thick slabs (about 1 cm) and fry until golden brown on both sides (2-3 minutes each).
  4. In a large bowl, combine mixed greens, cucumber, and cherry tomatoes.
  5. Remove halloumi from skillet to drain on paper towels. Add to the salad.
  6. Drizzle with remaining olive oil and lemon juice; season with salt and pepper. Toss gently.
