  • 34 boneless, skinless chicken breasts (1 pound)
  • 8 ounces penne pasta
  • 1 bunch fresh asparagus (about 1 pound), trimmed and cut into 2-inch pieces
  • 8 ounces sliced cremini or button mushrooms
  • 1 cup heavy cream
  • 3 cloves garlic, minced
  • 1 cup grated Parmesan cheese
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. Prepare your ingredients by chopping the chicken into bite-sized pieces, slicing the mushrooms, and trimming the asparagus.
  2. Cook penne pasta in boiling salted water according to package instructions until al dente. Drain and reserve half a cup of pasta water.
  3. In a large skillet over medium heat, heat olive oil. Sauté chicken pieces seasoned with salt and pepper until golden brown (6-7 minutes). Remove from skillet.
  4. In the same skillet, add more oil if needed; sauté garlic for about 30 seconds, then add mushrooms and asparagus. Cook until softened (about 5 minutes).
  5. Pour in heavy cream and stir in Parmesan cheese; bring to a gentle simmer. Add cooked chicken and penne along with reserved pasta water to reach desired creaminess.
  6. Serve hot with extra Parmesan on top and chopped parsley if desired.
