  • 4 boneless skinless chicken breasts (1.5 lbs)
  • 3 cloves fresh garlic, minced
  • 1/3 cup Dijon mustard
  • 1 cup heavy cream
  • 1/2 cup low-sodium chicken broth
  • 2 tablespoons fresh parsley, chopped
  • 2 lbs Yukon Gold potatoes, peeled and cubed
  • 4 tablespoons unsalted butter
  • 1/2 cup milk or cream
  • Salt and pepper to taste

Instructions

  1. Season chicken breasts with salt and pepper. In a large skillet, heat olive oil over medium-high heat. Cook chicken for about 6 minutes on each side until golden brown. Remove from skillet and set aside.
  2. In the same skillet, add minced garlic and sauté for about 1 minute until fragrant. Stir in Dijon mustard, heavy cream, and chicken broth until well combined to create the sauce.
  3. Return the chicken to the skillet and simmer in the sauce for 5 to 7 minutes until cooked through.
  4. Meanwhile, boil cubed potatoes in salted water for about 15-20 minutes until fork-tender. Drain the potatoes and return them to the pot.
  5. Add butter and milk or cream to the drained potatoes; mash until creamy and smooth. Season with salt to taste.
  6. Serve chicken alongside mashed potatoes drizzled with remaining sauce and garnish with fresh parsley.
