  • 1 cup quinoa, rinsed
  • 2 cups low-sodium chicken broth
  • 2 cups fresh broccoli florets
  • 2 cloves garlic, minced
  • 4 oz cream cheese (softened)
  • 2 tbsp low-sodium soy sauce
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C) and spray a baking dish with nonstick cooking spray.
  2. In a medium pot, bring chicken broth to a boil. Add rinsed quinoa, reduce heat to low, cover, and simmer for about 15 minutes until fluffy.
  3. Heat olive oil in a skillet over medium heat. Season chicken with salt and pepper; cook for about 6 minutes per side until golden brown and cooked through. Remove and chop into bite-sized pieces.
  4. In the same skillet, sauté chopped broccoli for about 3 minutes until bright green but crisp.
  5. In a large bowl, combine cooked quinoa, chopped chicken, sautéed broccoli, minced garlic, and softened cream cheese; mix well.
  6. Transfer the mixture to the prepared baking dish. Drizzle with soy sauce if desired. Bake uncovered for about 20 minutes until bubbly and golden.
