  • 4 medium Yukon Gold potatoes, peeled and diced
  • 6 slices bacon, diced
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups low-sodium chicken broth
  • 1 cup heavy cream
  • 1 cup sharp cheddar cheese, shredded
  • 2 green onions, chopped

Instructions

  1. In a large pot over medium heat, cook diced bacon until crispy. Remove bacon but leave grease in the pot.
  2. Sauté chopped onion and minced garlic in the bacon grease until translucent (about 3 minutes).
  3. Add diced potatoes and chicken broth; bring to a boil, then reduce heat and simmer until potatoes are tender (about 15 minutes).
  4. Blend the soup until smooth using an immersion blender or in batches with a regular blender.
  5. Stir in heavy cream and shredded cheese until melted; mix in crispy bacon bits.
